Here’s a recipe for Pad Thai:

Pad Thai Ingredients

  • 8 ounces dried rice noodles
  • 2 tablespoons oil
  • 2 cloves of garlic, minced
  • 1 egg
  • 8 ounces shrimp or chicken, peeled and deveined
  • 1 red bell pepper, sliced
  • 1 cup bean sprouts
  • 2 tablespoons peanuts, chopped
  • 2 green onions, chopped
  • 1 lime, cut into wedges

For the Pad Thai sauce

  • 3 tablespoons fish sauce
  • 2 tablespoons tamarind paste
  • 2 tablespoons palm sugar
  • 2 tablespoons water
  • 1 tablespoon chili flakes

Pad Thai Instructions & Preparation

  1. Soak the rice noodles in warm water for about 30 minutes, or until they are soft but still firm.
  2. In a small saucepan, whisk together the ingredients for the sauce and heat over low heat, stirring occasionally, until the sugar has dissolved.
  3. In a large wok or frying pan, heat the oil over medium heat. Add the garlic and cook until fragrant, about 30 seconds.
  4. Crack in the egg and scramble it until set, then push it to one side of the pan.
  5. Add the shrimp or chicken to the other side of the pan and cook until just pink, about 2-3 minutes.
  6. Drain the noodles and add them to the pan. Toss everything together until the noodles are fully coated in the sauce.
  7. Add the sliced red bell pepper and bean sprouts, and continue to stir-fry until the noodles are tender and the vegetables are just barely cooked, about 3-4 minutes.
  8. Stir in the chopped peanuts and green onions.
  9. Serve the Pad Thai with a squeeze of fresh lime juice and additional peanuts and green onions, if desired.
